This is one of ConnectOcean’s flagship projects, which won in early 2020 the 1st prize with the UN’s Reboot the Ocean initiative.
After setting out from Playa Flamingo with fishermen who have been working the waters of Guanacaste for generations, you will learn about sustainable fishing and traditional handline methods. These historical techniques make it possible for fishermen, suppliers, conservationists, and consumers to work together to catch and cook ocean-to-table fish that are sustainably sourced, support the local coastal communities, and are as fresh as it gets.
You’ll take your catch to the beachside restaurant Estero Azul, where you and an anthropologist-chef will prepare a meal reflecting pre-Hispanic culinary styles. This experience includes a private guide and translator, fishing on an artisanal boat with a local fisherman, fresh fruit, tea, soft drinks, and lunch at Estero Azul.
